Spiced Turkey, Squash and Apple Medley

pounds turkey thighs, skin removed
|

pound acorn squash, cut crosswise into 1-inch rings
|
|

pound cooking apples, cored and cut crosswise into 1/2-inch rings

cup apple juice
|
|

tablespoons packed brown sugar
|
|
1/2
|
teaspoon ground cinnamon
|
|
1/4
|
teaspoon ground nutmeg
|

1. Place turkey thighs to one side of 13×9×2-inch baking dish. Alternately layer squash and apple rings in other side of dish.

2. Combine apple juice, brown sugar, cinnamon and nutmeg in small bowl; pour over turkey, squash and apples. Cover with foil and bake in a preheated 350°F oven for 1 hour; uncover and baste with juices. Bake, uncovered, 15 minutes or until internal temperature of thighs registers 180°F on meat thermometer.
