Ingredients
1-1/2 pounds turkey thighs, skin removed
1 pound acorn squash, cut crosswise into 1-inch rings
1 pound cooking apples, cored and cut crosswise into 1/2-inch rings
1/4 cup apple juice
3 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
   
1. Place turkey thighs to one side of 13×9×2-inch baking dish. Alternately layer squash and apple rings in other side of dish.
2. Combine apple juice, brown sugar, cinnamon and nutmeg in small bowl; pour over turkey, squash and apples. Cover with foil and bake in a preheated 350°F oven for 1 hour; uncover and baste with juices. Bake, uncovered, 15 minutes or until internal temperature of thighs registers 180°F on meat thermometer.
