Apple-Potato Pancakes


Ingredients
1-1/4 cups unpeeled, finely chopped apples
1 cup peeled, grated potatoes
1/2 cup MOTT'S® Natural Apple Sauce
1/2 cup all-purpose flour
2 egg whites
1 teaspoon salt
  Additional MOTT'S® Natural Apple Sauce or apple slices (optional)
   
1. Preheat oven to 475°F. Spray cookie sheet with nonstick cooking spray.
2. In medium bowl, combine apples, potatoes, 1/2 cup applesauce, flour, egg whites and salt.
3. Spray large nonstick skillet with nonstick cooking spray; heat over medium heat until hot. Drop rounded tablespoonfuls of batter 2 inches apart into skillet. Cook 2 to 3 minutes on each side or until lightly browned. Place pancakes on prepared cookie sheet.
4. Bake 10 to 15 minutes or until crisp. Serve with additional applesauce or apple slices, if desired. Refrigerate leftovers.
