Reuben Bites


Although not a true Reuben sandwich, which is typically made with generous layers of corned beef, Swiss cheese and sauerkraut on sourdough rye bread, this lower fat version has all the flavor found in that world-famous sandwich.
 
Ingredients
24 party rye bread slices
1/2 cup prepared fat-free Thousand Island dressing
6 ounces turkey pastrami, very thinly sliced
1 cup (4 ounces) shredded reduced-fat Swiss cheese
1 cup alfalfa sprouts
   
1. Preheat oven to 400°F.
2. Arrange bread slices on nonstick baking sheet. Bake 5 minutes or until lightly toasted.
3. Spread 1 teaspoon dressing on each bread slice; top with pastrami, folding to fit bread slices. Sprinkle evenly with cheese.
4. Bake 5 minutes or until heated through. Top evenly with sprouts. Transfer to serving plate.
