Silly Spaghetti Casserole
Yield: Makes 6 servings
Ingredients:

ounces uncooked spaghetti, broken in half

1/4
cup finely grated Parmesan cheese

1/4
cup cholesterol-free egg substitute

3/4
pound ground turkey or ground beef

1/3
cup chopped onion

1/2
(10-ounce) package frozen cut spinach, thawed and squeezed dry

cups pasta sauce

3/4
cup (3 ounces) shredded part-skim mozzarella cheese

1
red and/or yellow bell pepper, cored and seeded



Preparation:

Preheat oven to 350°F. Spray 8-inch square baking dish with nonstick cooking spray.

Cook spaghetti according to package directions, omitting salt; drain. Return spaghetti to saucepan. Add Parmesan cheese and egg substitute; toss. Place in prepared baking dish.

Spray large nonstick skillet with cooking spray. Cook turkey and onion in skillet over medium-high heat until meat is lightly browned, stirring to break up meat. Drain fat. Stir in spinach and pasta sauce. Spoon over spaghetti mixture; sprinkle with mozzarella cheese.

Use small cookie cutter to cut decorative shapes from bell pepper. Arrange on top of cheese. Cover with foil. Bake 40 to 45 minutes or until bubbling. Let stand 10 minutes. Cut into squares.
