Tarragon Chicken Salad Sandwich
Yield: Makes 6 servings
Fresh grapes are added to this chicken salad for a burst of flavor and nutritional value. Besides supplying fiber and vitamin A, grapes are low in calories, which makes them a great snack food. Green grapes that have a tinge of yellow and red grapes that are predominantly crimson will be the sweetest.
Ingredients:
1-1/4
pounds boneless skinless chicken breasts, cooked

cup thinly sliced celery

1
cup seedless red or green grapes, cut into halves

1/2
cup raisins

1/2
cup plain nonfat yogurt

1/4
cup reduced-fat mayonnaise or salad dressing

tablespoons finely chopped shallots or onion

tablespoons minced fresh tarragon or 1 teaspoon dried tarragon leaves

teaspoon salt

1/8
teaspoon white pepper

lettuce leaves

6
whole wheat buns, split



Preparation:
1.
Cut chicken into 1/2-inch cubes. Combine chicken, celery, grapes and raisins in large bowl. Combine yogurt, mayonnaise, shallots, tarragon, salt and pepper in small bowl. Spoon over chicken mixture; mix lightly.

Place 1 lettuce leaf on each bun. Divide chicken mixture evenly among buns.
