Chocolate-Caramel S'Mores
Yield: Makes 6 servings
Here's a great-tasting twist on the unforgettable campfire favorite that you can make on your grill. If the coals are dying down, carefully remove the grill grid to a fireproof surface so that you can hold the marshmallows closer to the heat.
Ingredients:

chocolate wafer cookies or chocolate graham cracker squares
2
tablespoons fat-free caramel ice cream topping
6
large marshmallows
Preparation:

Prepare coals for grilling. Place 6 wafer cookies top down on plate. Spread 1 teaspoon caramel topping in center of each wafer to within about 1/4 inch of edge.

Spear 1 to 2 marshmallows onto long wood-handled skewer.* Hold several inches above coals 3 to 5 minutes or until marshmallows are golden and very soft, turning slowly. Push 1 marshmallow off into center of caramel. Top with plain wafer. Repeat with remaining marshmallows and wafers.
*If wood-handled skewers are unavailable, use oven mitt to protect hand from heat.
Tip:
S'Mores, a favorite campfire treat, got their name because everyone who tasted them wanted "some more." In the unlikely event of leftover S'Mores, they can be reheated in the microwave on HIGH 5 to 10 seconds.
