Perfect Pita Pizzas
Yield: Makes 4 servings
Have each child design their own funny face on their individual pizza!
Ingredients:
2
rounds whole wheat or white pita bread

1/2
cup spaghetti or pizza sauce

3/4
cup (3 ounces) shredded part-skim mozzarella cheese

1
small zucchini, sliced 1/4 inch thick

1/2
small carrot, peeled and sliced

2
cherry tomatoes, halved

1/4
small green bell pepper, sliced



Preparation:
1.
Preheat oven to 375°F. Line baking sheet with foil; set aside.

Using small scissors, carefully split each pita around edge; separate to form 2 rounds.

3.
Place rounds, rough sides up, on prepared baking sheet. Bake 5 minutes.

Spread 2 tablespoons spaghetti sauce onto each round; sprinkle with cheese. Decorate with vegetables to create faces. Bake 10 to 12 minutes or until cheese melts.


Pepperoni Pita Pizzas: Prepare pita rounds, partially bake and top with spaghetti sauce and cheese as directed. Place 2 small pepperoni slices on each pizza for eyes. Decorate with cut-up fresh vegetables for rest of face. Continue to bake as directed.
